Linda's lemony baked chicken

Here is my recipe for great baked chicken

Preheat oven 375 degrees

Makes 2 servings

2 chicken breast on the bone, skin on
2 lemons
1 teaspoon salt, preferrably sea salt or kosher
1/2 teaspoon fresh cracked pepper
1 tablespoon fresh minced rosemary
1 tablespoon minced garlic
2 teaspoon olive oil

Place chicken in oven safe dish that has been sprayed with cooking spray

in a small bowl place the salt, pepper, rosemary and garlic, and zest of both lemons; mix until blended

juice 1 1/2 lemons; pour over chicken breast

slice 1/2 of a lemon into 4 slice

take 1 tablespoon of seasoning mix for each chicken breast place under the skin, then place 2 slices of lemon on top of the seasoning under the skin.

Any extra seasoning can be sprinkled evenly over top of chicken, then drizzle each with 1 teaspoon of olive oil each.

Cover with foil and bake for 30 minutes, after 30 minutes uncover and continue to bake for another 15 minutes. (Total baking time will depend on size of chicken, internal temp should be 170 degrees). Remove from oven, cover with foil and rest meat for 10-15 minutes.

Hint: Remove the lemon slices before serving or warn your dinner guests to remove.

This is great served with rosemary garlic roasted red potatoes.

Well, Hello, everyone,

It has been a while since I posted anything. I started a new job in mid-May and here it is now the 4th of July. The new job seemed exciting at first, maybe just because it was a job. The first three weeks were very tough, tears and torture. It has gotten better and I seem to be adjusting to it. The pay is good and the benefits are better than my last job, so I can't fuss to much.

4th of July weekend was spent with my wonderful husband. We went to Saratoga for a concert, lunch in Cooperstown with a visit to our favorite cider mill, Fly Creek, then a relaxing evening at Vernon Downs Casino. He has a few more very deserved days off to relax. It was a great weekend.

I have reconnected with an old college friend through Facebook, she joined the Facebook revolution. It is a great way to reconnect with old friends and maybe make some new friends.

I have my own computer now, my husband and I had previously shared one laptop. Now he has the mac and I have the pc.

Opening Day


It is opening day for the Syracuse Chiefs, the local AAA baseball team affiliated with the Washington Nationals. We are lucky this year, the sun has come out and temps are to be in the high 70's low 80's. In past years, it has snowed, been freezing cold, or torrential downpours, but always a fun day with my husband. The peanuts are ready and I have my sunscreen and hat ready to go, its a great day for baseball.

Last night I went to my jewelry making class. I learned the basics to build on and I did a good job making a 2 pair of earrings and some sample bracelets. I need some more beads and to start making some for real. I am hoping to sell some on ebay maybe a craft fair or two. I only had beads in the blue/green family yesterday for class but once I start buying some more I will have a rainbow of beads to choose from. It is great having 3 craft stores in the area all of which have coupons either on line or in Sunday's paper, it helps save a little to increase my profit margin.

UPDATES:

Still unemployed. I have sent some resumes out, only two responses, both negative. Employers these days just don't generally respond to applicants, unless they want to interview you.

The new dinette is great, we really like it. The tv console looks great too and all those boxes and wires are now neatly tucked away, and since we have glass doors we can use the remotes with the doors closed. Yeah!

New dining set!!!

Yesterday was the first day of Spring! The sun has been shining here for days, which is a mind altering experience after several months of dreary winter days. Although, I really can't complain too much about our winter weather because it was not bad at all. An easy winter compared to some. Now that Spring is in the air, everything seems so much lighter and easier. I did some Spring cleaning yesterday, not so much because it wasSpring, but more that we are getting a new dining set and tv console on Wednesday.


I am hoping this nice weather will continue to be sunny so I can get out in the "yard", our "yard" being a small patio with an area of grass and flower border, and get things cleaned up. I need to get some bird feed and suet to get the feeders ready. We get lots of birds and squirrels as regular visitors, it keeps the cats entertained. This is our first year with Casey here, he already loves looking out the window and all the activity. He makes a strange barking sound when things are moving about outside. We love him anyways. I will have to take a picture of him, as well as Dallas, to post for all to see him.

Just a hint

So far my light dessert is coming out pretty good. Here is your hint; it is in the freezer. I have taken a little taste test and the taste is good, but the real judgement comes after dinner. I think it might be a winner. Stay posted.

Rewind, delete. The dessert tasted great, but the texture was not great and it froze to a solid mass. I may try some adjustments to see if it works differently.

Happy St. Patrick's Day

When I was in college my friends and I would get up early on St. Patrick's Day and go to a bar called McQ's for lucky charms and green beer. I never did like green beer, it is the most disgusting beer and what a headache, oy. My St. Patrick's day today has been much quieter than those of my college days, with a 3 mile walk then Cheerios for breakfast. The days have been warm and sunny so if I can get out and walk I am doing it. I walked yesterday 3 miles as well. I have my Wii Fit for the rainy, or possibly still snow, days. I like the fresh air and listening to the birds, it is very relaxing.

I am going to try a new recipe for a nice light dessert, if it goes well I will post it for everyone to enjoy. If not we will pretend the whole thing never existed.

Unemployed

Well, just about 4 weeks ago I was laid off from my job as a digital printer. I have sent a couple resumes out and I have one interview. The owner of the company I formerly worked at help with a couple of the job leads, but it some ways I feel like there may be some obligation due down the road with this. Maybe I am just paranoid. It hasn't been all bad, my bedroom has been picked up and have managed to make my bed everyday. I did well with making sure the dirty dishes were taken care of but have slacked a little in the area. I think once Spring really arrives and I can open the "wall of glass" in the living room and rearrange the furniture, it will be a boost. The cats keep me company during the day, sometimes. They seem more concerned with sleeping.

I am a diabetic, being diagnosed about a week before being laid off. Yes, February was an exciting month for me!! Being at home sometimes makes it easier for me to deal with this and the food issues that come with it, but there are other days, because there is still some not so great food in the house, where this is difficult. I have been exercising, but I could do better in this area.

Today I clipped 3 weeks of coupons from the Sunday paper inserts, sorted and filed them. My husband and I use coupons when we shop and it helps save some money, 2 weeks ago we saved $55.92 shopping at a store that we had up then avoided. It is further for us to go, it always seemed a little dirty to me and I never like the layout of the store. We gave it try because the store had a good ad, and the store has a shopper card that allows you to save not only on groceries but also towards gas at a certain chain of gas stations. Between the shopper card savings and coupons it came out to a savings of $55.92 which was one third of the original bill and we earned a $.20 cent per gallon savings on gas. It has become a win win situation, we save and they have a new customer.

I also made my bed, did an load of laundry, folded and put away, and cleaned Dallas's ears, he gets smelly ears. I will shower shortly and head out to Office Max for blank cd's. I know, I know, so much excitement in one day....
