Vegifetti Turkey Meatloaf

I am a little behind in my posting and I don't have a picture of this recipe. 

Vegifetti Turkey Meatloaf

1 small onion, chopped
1/2 cup chopped fresh mushrooms (use whatever kind you like)
1/2 cup chopped bell peppers (I like using red, orange or yellow, but whatever you like is fine)
1/4 cup shredded carrot
1/2 teaspoon butter
1 teaspoon canola oil (or olive oil)
1 Tablespoon chopped garlic
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon poultry seasoning
1 Tablespoon Worchestire sauce
1 20 oz. package of lean ground Turkey (97% fat free)
1 12 oz. jar of turkey gravy
1 egg white
1/2 cup plain bread crumbs

Preheat oven to 350 degrees.

Preheat a large skillet add oil and butter then add vegetables and seasonings, all but the Worchestire Sauce.  Cook until the vegetables are just tender, remove from heat add Worchestire Sauce and let cool.

In large mixing bowl place turkey, egg white, bread crumbs and cooled vegetable mix.  Gently blend the mixture with a fork.

Form into a loaf, top with 3 Tablespoons of jar gravy and bake uncovered in 350 degree oven for 30-40 minutes.

Heat the remaining jar gravy to serve with meatloaf.

Chicken Cordon Buffalo Bleu

This recipe came about as a collaboration with my husband.  It is fairly easy and great just served with a big salad.

Chicken Cordon Buffalo Bleu

Preheat oven to 400 degrees

This is a 2 part recipe.

Part 1 - bread crumb mix

2/3 cup Panko bread crumbs
1/4 tsp salt (I use kosher salt)
1/8 tsp pepper
1/8 tsp celery seed
1 tsp vegetable oil

Blend together

Part 2 - Chicken

2 boneless skinless chicken breasts
1/3 cup plus 2 tsp buffalo sauce
4 Tbl crumbled bleu cheese

butterfly each chicken breast lengthwise, then working with the chicken inside face up, spread each with 1 tsp of buffalo sauce, then ad 2 Tbl crumbled bleu cheese, fold chicken in half lengthwise, hold together with toothpicks if needed.

Place 1/3 cup of buffalo sauce on a plate and the bread crumb mix on another plate.

Coat the stuffed chicken breast in buffalo sauce then roll in bread crumbs, place on a lightly oiled baking sheet.

Bake in 400 degree oven for 40 minutes.

On the lighter side Ambrosia

I went to a family picnic over the weekend and I brought Ambrosia salad.  I found a recipe and made it my own, making it lighter than some of the ones I found out there.  Everyone at the picnic loved it and I hope you do to.  Sorry, no picture with this one.

On the lighter side Ambrosia!

2 - 20 oz cans of pineapple chunks in natural juice, drained
2 - 15 oz cans of mandarin oranges in natural juice for light syrup, drained
1 - 10 oz jar of maraschino cherries, drained and rinsed
1 and 1/2 cup of coconut flakes (unsweetened if you can find it)
3 cups mini marshmallows
3/4 cup light or fat free sour cream
1 - 16 oz container plus 1 cup sugar free or light Cool Whip

In a large mixing bowl gently combine sour cream and Cool Whip.  Fold in all other ingredients.  Cover and chill for at least 2 hours.
